Those who know me know I love to start the day off right with a wholesome and nourishing breakfast. This wholefood pancake recipe has got me through many a working week by providing protein, fibre and energy. It is also one of my favourite healthy treats to cook up on the weekends and feed the family.
Wholefood Banana Pancakes
Ingredients:
100g brown rice flour (alternatively you can use another whole flour such as millet, sorghum or wholewheat flour)
100g buckwheat flour
2 bananas
1 egg
300g milk of choice
1 tsp baking powder
olive oil for frying
berries, yogurt, nuts and seeds and ground linseed for serving
Directions:
Mash bananas, whisk egg and mix together.
Stir through flour with a wooden spoon under well combined.
Add milk and baking powder and mix well with beaters under well combined.
Cover and refrigerate batter for 30 minutes.
Remove from refrigerate and heat a medium sized frying pan over medium heat.
Add oil and pour in a ladle of pancake mixture.
Fry for 3 minutes each side until browned.
Repeat with remaining pancakes.
Top with your favourite toppings as above.
